This programme consists of two modules - Food & Cookery - Food Handling & Nutrition. This course will give participants an overview of the procedures involved in serving and preparing food as well as touching on marketing their produce. Candidates who successfully complete this module will develop the skills needed to prepare and serve food efficiently and safely; contribute to the team production of a meal; and express creativity through cooking.

Anyone located in the South Kerry Region with an interest in completing a cooking and preparation of food to professional and commercial standards with a view to selling their produce at local markets.
:: Course Objective
To successfully plan, prepare and evaluate healthy meals and produce, as well as gaining a clear understanding of the food pyramid.
:: Course Content
- Candidates will plan, prepare and evaluate a healthy breakfast.
- Candidates will plan, prepare and evaluate a healthy snack or lunch.
- As part of a team, candidates will plan, prepare and evaluate a three course meal
- Candidates will be instructed on how to observe good personal and working hygiene practices
- The use of the food pyramid chart to choose appropriate food groups and best practices
- Planning processes for food preparation
- The tools to successfully integrate into local markets
